I use a Cisco 806 router at my home which doesn't have UPnP.  I have no
trouble operating any software on any of my computers including iChat on my
Mac.

I agree, UPNP is really cool and a must for NAT boxes today. Too many  
apps are already relying on this  and by far not only on Windows  
systems (i.e. iChat on MacOS X too).
