AFAIK, you can run DHCPs on each interface. I read at one point that
there is a limit to the number of interfaces that can run DHCP, but I
do not know what it is. 

I run DHCP for my LAN network on a LAN server and run DHCP for my OPT1
network on the m0n0wall.
