In m0n0wall (Diagnostics: Logs\settings tab) you have to enable
syslog'ing to remote server AND enter the IP address of the remote
"server".

For the remote server, are you sure the syslog service daemon is
running? Kiwi Syslog has a tool to allow you to send "test data" from
a workstation to the syslog server, to validate the syslog server is
functioning properly.
