I haven't even gotten that far... No extensions involved.

I'm simply calling my telephone number that is assigned to Asterisk...
Then, the auto-attendant answers and the hick-ups/jitters start
happening big-time.

Couple of things:

a. Do you have this problem when you have a phone on the same local
not passing through your m0n0wall box?
b. What protocal are you using (SIP or H.323)?
c. Are you using phones or soft clients or both?
