It is very hard to sniff a switched fabric. (And this is kind of what AP
Isolation does) You can do some tricks, but most of them are very
noticeable. Generally, to effectively sniff, you need to interrupt the
traffic some way. If you can monitor for this, you are mostly safe from
sniffing.
