There are no DMZ1/DMZ2 Interfaces by default.  You have to add a rule
using any of the (+) icons, set your rule and choose an interface in
there.  The interfaces will be listed as DMZ1/DMZ2 everywhere on
m0n0wall except in the Assign Interfaces screen.
